Ioannis Mitsis, a lover of good food (“souvla” spit roast, “ofto” and “kleftiko” stuffed meat in wooden oven, etc) and good wine (muscat, “ampelisimo”,
“mavro” and “sterko” varieties), always bought good quality wine from friends or close relatives – producers living in the nearby Traditional Villages Gerakies, Polystypo and Kannavia (Pitsilia, Marathasa, etc).
One year around 1960, Telemachus, a friend of Grandpa Giannis, was hosted in his rich village named Zodia. Telemachus’ job was to sale his wine in the village, door to door, in small barrels. But this year he brought big quantity, it was not sold, and he was very upset because he was poor.
Christmas was approaching and Telemachus had to leave for his own village. Grandpa Giannis then decided the unexpected. He bought all Telemachus’ wine to help him. When asked what he would do with it, he had already decided.
After consulting old winemakers, and after reading several books, Grandpa Giannis quickly realized that the uniqueness of these indigenous wine varieties resulted in producing excellent vinegar of incomparable taste and aroma. And this is what he did, establishing since 1961 standard recipes for the production of authentic wine vinegar, which were handed over to his family and are kept a seven – sealed secret since then.
Today,more than sixty years later, the third generation of the family maintains the knowledge and recipes received unchanged, as a genuine legacy from Grandpa Giannis, and continues with the same dedication having embraced the thirty year’s experience of the largest vinegar producing factory of Northern Greece, which was redeemed in 2017.
